Crostini Three Ways

Proscuitto, Spinach & Tomato Crostini

Serves 2


1/2 lb Imported Prosciutto

1 container of baby spinach

1 container cherry tomatoes

2 cloves of garlic minced

1/2 cup mayonnaise

2 tablespoon Dijon mustard

3 baguettes

Extra virgin olive oil




Preheat oven to 350.

Place mayonnaise and Dijon mustard in a small bowl and whisk to combine.

Slice baguette 1/4 of an inch thick and place sliced baguette on a cookie sheet and drizzle or brush with olive oil and season with salt and pepper.

Bake for 10 minutes then flip over drizzle with more olive oil and salt and pepper and bake additional 10 minutes so both sides are golden.

While the crostini is baking preheat a skillet with 1 tablespoon of olive oil and add minced garlic and sauté until garlic starts to brown. Add spinach and cook until spinach is wilted stirring occasionally.

Remove crostini from oven.

Spread Dijon mayonnaise on crostini.

Top with a slice of Prosciutto.

Place cooked spinach on top of Prosciutto.

Top with half of a cherry tomato.

Garnish with chopped parsley.

Lobster Roll Crostini


1 lb of lobster meat or Langostino

1 stalk of celery chopped

1/4 cup drawn butter

1/4 cup mayonnaise

Juice of 1/2 lemon

Salt and pepper

Chopped green onion for Garnish


Place lobster or Langostino in a large bowl.

Add butter and lemon juice and stir to coat the meat.

Add mayonnaise and celery and stir.

Salt and pepper to taste.

California Roll Crostini


1 3/4 cups Panko bread crumbs

1 lb lump crab meat checked well for shell fragments or imitation crab meat

1/2 cup mayonnaise

2 tablespoon Dijon mustard

2 eggs

2 teaspoon Old Bay seasoning

1 pinch salt

1 pinch pepper

1 European cucumber sliced

1 avocado

Lime juice

2 tablespoon butter


Slice cucumber and avocado and squeeze lime juice on avocado.

Place Panko crumbs into a large bowl. Add mayonnaise, mustard, eggs, Old Bay seasoning, salt, pepper and half of crab meat and stir to combine. Add the rest of the crab meat and gently stir trying not to break up the lumps too much. Form small crab cakes around the same width as the crostini.

Melt butter in skillet.

Place crab cakes in skillet and sauté until golden brown about 4 minutes. Flip and sauté until golden brown about an additional 4 minutes.

Place 1 slice of cucumber on crostini.

Top with slice of avocado.


Earl Grey Tea Cocktail

Serves 1


6 ounces cold Earl Grey tea

1 1⁄4 ounces gin

1⁄2 ounce fresh-squeezed lemon juice

5 cups water

1 cup honey

2 lavender sprigs


Brew 4 cups Earl Grey tea, enough to make several cocktails. Refrigerate until cool.

Place honey and water in a small saucepan and let simmer until honey is dissolved.

Remove from heat and refrigerate until cool.

Combine measured ingredients in cocktail shaker with 2 sprigs of lavender and ice.

Shake several times. Strain mixture over fresh ice into tumbler and garnish with lavender.
